Finally home from Kansas and ready for the official start of Summer this week! So, I thought I would share with you a delicious, simple appetizer I adapted from a recent Bon Appetit magazine and made while we were at the ranch.
For the original recipe, go here.
I traded out Creme Fraiche and Goat Cheese for the Mexican Crema and Feta. I’ve made this recipe twice and forgot the squeeze of lime once. A small but key ingredient, we’ve determined!
What’s your “go to” summer appetizer for outdoor dining?
That looks AMAZING!!!!! And might I also say that your pictures are truly "Gourmet magazine" worthy. Fantastic looking and sounding, a recipe I am definitely going to jot down, always looking for great and new appetizers for summer entertaining. This looks like a winner, and welcome home!
Looks delicious and different!! I agree with Tina – your photos are fabulous!!
Yummy…I am going to have to try this!! Take care, Caroline
Looks delicious!! Bruschetta is my "go to" for summer. xx
So much more fun than my old stand-by of melon wrapped with prosciutto! Looks delicious and who doesn't love fresh corn.
xxoo
Yum! Looks like summer on a plate. Great photos. I hope you had a wonderful stay in Kansas, and that your summer months unfold with plenty of happiness, deliciousness and joy! XO

You had me at Simple and Summer and then I saw the pictures! Looks amazing.
Have to try this and I like your way with Mexican Crema and Feta – not a goat cheese fan here. But since everyone is liking this post so much, you could just give us all a ring next time you're making it and we'll all come running!

These look delicious! I must have overlooked them in the magazine but I'm going back to try them now!

OMG! I could eat that whole platter right now..with or with out the lime! Geez!
One of my favorite things about this recipe is that my husband does the grilling portion….all i have to do is prep and assemble. Win-win!!
I promise, it's as good as it tastes! Wish I could have you all over for a backyard bbq this week!!!
