Last night, we had dinner with friends. One of those perfect nights, where you instantly felt transported and honestly didn’t want to leave. We ate outside, bugs at bay, and talked about places we had been and places we wanted to go. Summer has begun.
My task was to bring dessert….so I gravitated toward my favorite summer fruit…strawberries. They are especially great right now. Juicy and ripe and ready for you to bite into. But, blended in a few other ways, they can be an even bigger treat. Trifle. Crumb cake. Lemonade.
I’ll take any and all. My birthday is later this month and my mom always made me a strawberry pie instead of a birthday cake. I preferred it and it became tradition. I love thinking that she was kind of ahead of her time….baking what was “in season”. Little did I know that we would all eventually catch up and “farm to table” would be a way of life.
So, when you’re at the store this week, grab a pint of strawberries. Smush them. Blend them. Or eat them whole. But, don’t miss this juicy little treat. It’s summer, after all.
